For 1 year, the basic wine is stored in used wooden barrels in the cold cellar without any additives. The second fermentation in the bottle happens instead of adding yeast and sugar with fresh grape must. In August 2017, after 3 years of bottle maturation, the lime rich was degorged, i.e. the yeast was removed and the wine labelled. Predestined as a food companion, ripe cheese complements the fine mineral particularly well.
