What exactly is cava?

Cava is Spain's sparkling wine with a long tradition and still an insider tip for many. Produced using the classic bottle fermentation method, but at much fairer prices than champagne, cava combines the best of two worlds: craftsmanship and joie de vivre.

Origin, grape varieties & designation of origin

Cava comes mainly from the Catalan Penedès region, but can only be called cava if it meets certain requirements – from harvesting to storage. The most important grape varieties are Macabeo, Xarel·lo and Parellada, complemented by Chardonnay and Pinot Noir.

Traditional bottle fermentation explained

As with champagne, the fine bubbles in cava are produced by a second fermentation in the bottle, not in the tank. After months of yeast storage, the wine is disgorged and dosed. The result is a finely sparkling, complex sparkling wine with depth.

Difference between cava, sparkling wine, and prosecco

In terms of production and taste, cava is closer to champagne than prosecco: it is traditionally fermented in the bottle, which makes it more aromatic, complex, and structured than many sparkling wines. Prosecco, on the other hand, is lighter, fruitier, and usually fermented in tanks. If you prefer something elegant, dry, and a little more individual, cava is the way to go.
